Veggie Burritos

If you have been following me on pretty much any social media (I’m aware I’m on most of it most of the time) you may be aware that I am currently completing my very first detox/juice fast thing. There are a few reasons why I’m trying this; to improve the acne on my face, to give my poor liver a helping hand, and to know what it’s like to do one, in case one day in the future one of my patient’s would like to try one, so I can give them genuine advice and tell them what to expect.

For me, I don’t really drink coffee, and haven’t been consuming that much sugar of late, I don’t eat dairy, because I can’t, and I don’t drink that often either, so my struggle with this cleanse so far, is that I am constantly hungry. I thought I would miss salt, but protein, baby! Protein is what I miss!

Yesterday was day 3 and my diet for the day was limited to raw fruit and vegetables, but instead of just munching on carrot sticks, I decided to make meals so I at least feel like I’m having a proper meal.

*NOTE* When you make this recipe, make sure you add some sort of protein (red kidney beans, tuna, tempeh, chicken, kangaroo, beef, tofu, etc), as I do not feel comfortable giving you detox instructions when I don’t know anything about how what’s going on with your body*

The good thing about this recipe is that not only does it taste AH-MAHHH-ZING, it’s dairy-free, gluten-free, grain-free, packed with nutrients, low calorie and depending on which protein you choose, it can be vegan or paleo friendly. So, let’s get to it!

Veggie Burritos Assembled


Serves 1


2 large leaves (I used beetroot leaves, but large lettuce, cabbage, or other green leaf that is large enough will do)

1/2 Zucchini & carrot, chopped into matchsticks

1/2 tomato, cubed

1/4 capsicum, sliced

1/2 avocado, cubed

1/2-1 cup protein (of your choice, cubed/sliced as necessary)

1 tbl fresh coriander, finely chopped

1 clove garlic, crushed

1 tsp chilli flakes

1/2 lime


After you’ve thoroughly washed your large leaves, lay them flat on a plate and distribute your ingredients evenly so that they can still roll up easily. Sprinkle over the chilli flakes, garlic, coriander and squeeze over your lime juice before rolling up.

*NOTE* This will be messy, but fun stuff usually is, so enjoy it!*
